Autumn Apple Chicken


  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 apples, cored and sliced
  • 1/4 cup apple cider vinegar
  • 1/4 cup chicken broth
  • 2 tablespoons honey
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5 minutes on each side, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced onion and cook for about 5 minutes, or until softened and lightly browned.
  4. Add the sliced apples to the skillet and cook for another 3-4 minutes, until they start to soften.
  5. In a small bowl, whisk together the apple cider vinegar, chicken broth, honey, and dried thyme. Pour the mixture into the skillet with the onions and apples.
  6. Bring the mixture to a simmer and cook for about 5 minutes, or until the sauce has thickened slightly.
  7. Return the chicken breasts to the skillet and spoon the sauce, onions, and apples over the top.
  8. Reduce the heat to low, cover the skillet, and let the chicken simmer in the sauce for another 5 minutes, or until heated through.
  9. Serve the Autumn Apple Chicken with the sauce, onions, and apples spooned over the top.
