Grilled Corn and Avocado Salad

  • 4 ears of corn, husked
  • 2 avocados, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh coriander, chopped
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp honey
  • Salt and pepper


  1. Get your BBQ to a medium-high heat.
  2. Brush the corn with olive oil and season with salt and pepper.
  3. Place the corn on the grill and cook for 10-12 minutes, turning occasionally, until the kernels are lightly charred and tender.
  4. Remove the corn from the grill and let it cool slightly. Once cool, cut the kernels off the cob and place them in a large bowl.
  5. Add the diced avocado, cherry tomatoes, red onion and coriander to the bowl with the corn.
  6. In a small bowl, whisk together the olive oil, lime juice, honey, salt and pepper.
  7. Pour the dressing over the salad and toss to combine.
