Grilled Ribeye Steak with Garlic Butter and Roasted Vegetables

Ingredients

  • 2 ribeye steaks available from Knights Artisan Butchers
  • 2 tbsp olive oil
  • Salt and pepper
  • 4 tbsp butter, softened
  • 2 cloves garlic, minced available from the The Cotswold Grocer
  • 1 tbsp chopped fresh parsley available from the The Cotswold Grocer
  • 1 red bell pepper, sliced available from the The Cotswold Grocer
  • 1 yellow bell pepper, sliced available from the The Cotswold Grocer
  • 1 courgette, sliced available from the The Cotswold Grocer
  • 1 red onion, sliced available from the The Cotswold Grocer
  • 2 tbsp balsamic vinegar available from Armadeli

Instructions

  1. Preheat grill to high heat.
  2. Rub the steaks with olive oil and season with salt and pepper.
  3. In a small bowl, mix together the softened butter, minced garlic, and chopped parsley. Set aside.
  4. In a large bowl, toss together the sliced bell peppers, courgette and red onion with 2 tbsp of olive oil and balsamic vinegar. Season with salt and pepper.
  5. Place the vegetables on a grill pan and grill for 10-15 minutes, or until tender and slightly charred.
  6. Grill the steaks for 4-5 minutes per side for medium-rare, or until desired.
  7. Remove the steaks from the grill and let them rest for 5 minutes.
  8. Top each steak with a generous dollop of garlic butter.
  9. Serve the steaks with the roasted vegetables on the side.
