Pork, pear, sweet potato, and Stilton tray roast

  • 1.5 pounds (700g) pork tenderloin
  • 1 tablespoon fresh rosemary, chopped
  • 4 cloves of garlic, minced
  • 1 red onion, sliced
  • 2 pears, cored and sliced
  • 2 sweet potatoes, trimmed peeled and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1/2 cup crumbled Stilton cheese


  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced pears, cubed sweet potatoes, sliced red onion, minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper. Toss everything together to coat the ingredients evenly.
  3. Place the pork tenderloin in the center of a large baking tray or roasting pan. Arrange the seasoned pear, sweet potato, and onion mixture around the pork.
  4. Roast in the preheated oven for about 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the vegetables are tender.
  5. Remove the tray from the oven and sprinkle the crumbled Stilton cheese over the roasted pork, pears and vegetables.
  6. Return the tray to the oven for an additional 2-3 minutes, or until the cheese has melted and slightly caramelized.
  7. Remove from the oven and let the tray roast rest for a few minutes before slicing the pork tenderloin.
  8. Serve the sliced pork, roasted pears, sweet potatoes, and onions on a platter, and drizzle any pan juices over the top.
