Slow roast Greek lamb

Ingredients

  • 6 lamb shanks
  • 8 sprigs fresh rosemary
  • 8 garlic cloves cut into pieces
  • 1 lemon juiced zested
  • 1/4 cup honey
  • 2 onions

Instructions

  1. Make some cuts in the lamb with a sharp knife and insert the slivers of garlic.
  2. Cover lamb with the rest of the ingredients.
  3. Cover with 2 layers of foil and bake for 5 - 9 hours.
  4. Pour off liquid and remove any oil. Boil rapidly and reduce. Adjust flavour to suit by adding some wine, salt and pepper, extra honey, or some mint. Thicken with some cornflour mixed with a little water, if required.
