Turkey Cranberry Quesadillas

  • Leftover turkey, shredded or sliced
  • Flour tortillas
  • Cranberry sauce
  • Brie cheese, sliced
  • Shredded leek
  • Salt and pepper to taste
  • Olive oil for cooking


  1. Lay out a flour tortilla on a clean surface.
  2. Spread a thin layer of cranberry sauce on one half of the tortilla.
  3. . Place a few slices of brie cheese on top of the cranberry sauce.
  4. Add a handful of shredded turkey on top of the cheese.
  5. Sprinkle some fried shredded leek over the turkey.
  6. Season with salt and pepper to taste.
  7. Fold the tortilla in half, pressing down gently to seal the ingredients inside.
  8. Repeat the process for the remaining tortillas and ingredients.
  9. Heat a drizzle of olive oil in a large pan over medium heat.
  10. Place the quesadillas in the pan and cook for about 2-3 minutes on each side, or until the tortillas are golden brown and the cheese has melted.
  11. Remove from the pan and let them cool for a minute before slicing into wedges.
  12. Serve the turkey cranberry quesadillas as a unique and delicious leftover turkey dish.
