Grilled Vegetable Kebabs

Ingredients

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 courgette, sliced
  • mushrooms, sliced
  • 1 red onion, cut into chunks
  • 8-10 cherry tomatoes
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper
  • Skewers

Instructions

  1. Get your BBQ to medium-high heat.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt and pepper.
  3. Thread the vegetables onto skewers, alternating between the ingredients.
  4. Brush the skewers with the olive oil mixture, making sure they are evenly coated.
  5. Place the skewers on the grill and cook for 2-3 minutes per side, or until the vegetables are tender and lightly charred.
  6. Remove the skewers from the grill and serve hot.
