
AUTHENTIC INDIAN STREET FOOD ON THE MENU AT FIVE VALLEYS

A family run business serving up
delicious food from Southern India has joined the popular street food market at
Five Valleys in Stroud.
The Biryani Pot is the creation
of chef Gautam Kaila who has experience of cooking in high end kitchens in
India - more recently he has been the head chef at Bath’s Fine Cheese
Company and the luxury Calcot Manor.
Now Gautam has realised the dream of running his own business full time by expanding his home delivery
service to a wider audience at the busy town centre street food market.
Gautam creates delicious,
authentic Hydrabadi Biryani dishes as well as dosa, chai and other snacks
and delicious chutneys. He started cooking the famous dish in traditional clay
pots after missing the cuisine of his childhood.
He quickly built up a home
delivery following and now Gautam is serving up his fabulous spicy
rice dishes at Five Valleys, all cooked in the traditional Hydrabadi
style.
Biryani is a popular dish of
layers of savoury meat – usually chicken or goat or sometimes vegetables –
steamed together with basmati rice and spices. The bottom layer of rice absorbs
the meat juices as it cooks, giving that rice a tender texture and a rich
flavour, while the top layer of rice remains white and fluffy.
While there are so many versions of Biryani, the most famous and
the best are from Hyderabad, where Gautam’s recipes come from, presented in
traditional Indian clay pots.
Gautam said: “I love the
flavours and recipes of Southern India and the region I grew up in,
and I am so excited to have expanded the Biryani Pot to bring our dishes to
Five Valleys Market.
“It is such a great location for
authentic street food and we’re proud to be part of the market and looking
forward to growing the business here.”
